Super- Immune Sauté Recipe
What you will need:
10 shiitake mushrooms
1 medium onion
2 cups baby spinach
1 tablespoon coconut oil
1 teaspoon balsamic vinegar
Medium Saucepan with lid/cover
Steps to make:
1. Warm coconut oil in medium saucepan.
2. Sauté onions until begin to soften on medium heat.
3. Add mushrooms and balsamic vinegar and sauté for a few minutes until browned.
4. Turn off heat, add spinach and cover for 2 minutes to lightly steam the leaves.
5. Uncover and serves 2!
Shiitake mushrooms have been used medicinally by the Chinese for more than 6,000 years and have recently been studied for their immuno-supportive properties while providing a great source of iron and B vitamins. Onions decrease inflammation and are an excellent source of quercetin, a natural anti-histamine. Spinach boosts immunity by providing many phyto-nutrients such as vitamin C and beta-carotene which have infection fighting ability. Coconut oil contains monolaurin, a compound that breaks down walls of viruses. Balsamic vinegar contains antioxidants known as polyphenols which reduce cellular damage and decrease incidence of cancer cells.
